Ingredients.
- 3 medium-sized zucchini
- 3 eggs
- flour - for breading
- breadcrumbs from TM EKO - to taste
- pepper mix from TM EKO - to taste
- salt - to taste
- oil - for frying
For the filling:
- 3 processed cheeses
- 2 tbsp parmesan cheese
- 2-3 cloves
- garlic
- 2 tbsp sour cream or mayonnaise
- a bunch of herbs (dill or parsley)

Preparation
Slice the zucchini into thin slices, add salt, add the EKO pepper mix, mix and leave for about 10 minutes to let the juice flow. Meanwhile, beat the eggs with a pinch of salt and the pepper mix.
After that, drain the excess juice from the zucchini. First, roll each slice in flour, then dip it in an egg, and then bread it in EKO breadcrumbs. Fry the zucchini in a frying pan with heated oil until golden brown on both sides. Put the finished slices on a paper towel to remove excess oil and stack them on top of each other while still warm to make them softer and easier to roll up.
For the filling, combine processed cheeses, Parmesan, sour cream or mayonnaise, chopped garlic and herbs, and then blend until smooth and tender. Spread each zucchini slice with the filling, add a lettuce leaf and a cherry tomato, and then gently roll it up.
It tastes better with ECO!
