Ingredients.
Eggs: 5 pcs.
Sugar: 300 г
Cheese (cottage cheese) 450 g (it is better to take fat, 5-9%)
Flour 450 g
Butter (melted) 150 g
Baking powder TM “Eco” 12 g
Vanillin TM “Eco” 10 g
Seasoning for syrniki TM ”Eco” 10 g
Candied or dried berries to taste (approx. 100-150 g)
Preparation
Prepare the cottage cheese: Make sure to grind the cottage cheese through a sieve or whip it in a blender until it is smooth and creamy, so that there are no grains in the paska.
Beat the eggs: Beat the eggs with the sugar and vanilla into a fluffy light foam (beat for 5-7 minutes, until the mass increases significantly in volume).
Mixing the base: Add the grated cheese and warm (not hot!) melted butter to the beaten eggs. Mix thoroughly with a whisk or mixer on low speed. Add the Eko syrniki seasoning to give the Easter cake a special spicy flavour.
Dry ingredients: Mix flour with baking powder and gradually sift into the cottage cheese and egg mixture. Knead a soft, fairly thick dough.Additions: Rinse the candied or dried berries, dry them with a towel and lightly roll them in flour (so that they are evenly distributed in the dough). Mix them into the dough with a spatula.
Baking:
Put the dough into the moulds, filling them to about 2/3 of their volume.
Bake in an oven preheated to 170-180°C.
The baking time depends on the size of the tins: small cakes take 30-40 minutes to cook, large cakes take 50-70 minutes. Check for doneness with a dry wooden stick.
Cooling: Leave the finished cakes in the tins for 10-15 minutes, then remove them and let them cool completely on a wire rack.
Tip: As the recipe contains a lot of cottage cheese, the cake will be heavy and moist. Do not open the oven for the first 30 minutes to prevent the dough from settling. Enjoy your Easter cake!
