Ingredients.
For the dough:
- 200 ml of milk
- 40 g of sugar
- 30 g of yeast
- 40 g of flour
For the dough:
- 3 eggs
- 10 g of vanilla sugar from TM «EKO»
- 160 g of sugar
- 1/3 tsp turmeric from TM «ECO»
- pinch of salt
- a pinch of nutmeg from TM «EKO»
- 600-650 g of flour
- 150 g butter 82%
- 1 tbsp lemon juice zest of one lemon
For the filling:
- 200 g raisins soaked in 100 ml rum
- 200 g of candied fruit
- 50 g of butter for greasing
Preparation
For the dough, add the sugar, yeast and flour to the warm milk, mix well, cover and leave in a warm place for 15-20 minutes to activate the mass. Separately, beat the eggs with sugar, vanilla sugar, salt and turmeric until smooth and fluffy.
After that, combine the dough with the egg mixture, add nutmeg, lemon zest, lemon juice, soft butter and gradually add the sifted flour. Knead a soft, elastic dough. Put it in a greased bowl, cover and leave it in a warm place for about 1 hour, until it doubles in volume. When the dough is ready, knead it and divide it into 2 parts.
Roll out each part into a thin rectangular layer, brush with soft butter, sprinkle generously with raisins and candied fruit, and then wrap it in a roll. Cut each roll in half lengthwise, without cutting a few centimetres to the edge, and roll both parts into a snail, placing them on top of each other. Transfer the formed kraffins to the moulds, leave them to rise for another 30 minutes, and then bake them in a preheated 170°C eukhovtsy 40-45 minutes.
Cool the ready-made kraffins completely, and then sprinkle them generously with powdered sugar from EKO TM.
